Peanut butter pie, banana date muffins and more

Holidays and rainy days are great excuses to whip up some delicious treats — not that you need an excuse! I used the Easter weekend to catch up on some recipes I’d saved and wanted to test out.

I also made some tried-and-true refined sugar-free classics popular with my family and friends. Check it out below. Did you do any baking over the long weekend?

Peanut butter pie

I’ve mentioned this decadent pie before from Detoxinista‘s kitchen before. It’s sweetened with maple syrup and tastes just like a Reese’s Peanut Butter Cup, without the processed ingredients!

Healthy banana blueberry bread

My favourite banana bread recipe got a boost with frozen blueberries added in and some extra banana on top. I used honey instead of maple syrup this time, and only 1/4 cup instead of 1/2; a change I’ll continue to make moving forward. This bread is easy to whip up and is always such a hit!

Banana date muffins with flax and cashews

I amended these delicious and healthy muffins from In the Fields by throwing in crushed cashews instead of walnuts and using coconut oil instead of applesauce this time. Delicious, dense muffins result!
