Mediterranean zucchini pasta

Need a quick and easy spring lunch or dinner idea that’s light and healthy? Meet thisΒ refreshing Greek-inspired zucchini noodle dish.

Ingredients (makes two servings)

  • one large zucchini squash
  • half a red pepper, chopped
  • handful Kalamata olives
  • 1/4 cup feta cheese, sliced
  • half tomato, chopped (or grape tomatoes)
  • Greek vinaigrette or lemon garlic dressing (we love this one)
  • Pinch salt and pepper

Steps

  1. Wash and peel zucchini, leaving some skin if you like
  2. Spiralize zucchini into noodles (I use this tool)

  1. Wash and chop other vegetables and cheese
  2. Toss noodles into frying pan on medium heat with a bit of olive oil and salt
  3. Fry for 3-5 minutes, until zucchini is softer yet not limp
  4. Put noodles into bowl and add vegetables, olives, cheese
  5. Drizzle with dressing and add a pinch of sea salt and black pepper
  6. Enjoy!
