What’s getting me through this rainy and dull spring!

An attitude of gratitude

I’m a worrier by nature and so mindfulness and practicing gratitude are key things I try to incorporate into my day to achieve a more calm mental state.

Stones, balance, meditate

It’s not always easy, but thinking about three things you’re grateful for every time you do something routine like wash your hands or using a gratitude journal at the end of the day is proven to add more joy to your life.

This frittata

Confession: I don’t think I’ve ever made a frittata before. An omelette, yes – many times over – but not its delicious, baked cousin: the way-more-fancy-sounding frittata!

I read a bunch of Food & Wine and Bon Appetit magazines on the plane to and from our recent trip, and was inspired to make one after reading a recipe. I amended that recipe a bit based on what I had in the fridge, and it was so easy and delicious – made a great lunch alongside roasted sweet potatoes for the next couple of days.

📣Say this 3 times fast: zucchini broccolini frittata 📣 Ok, so not that easy to repeat, but SUPER easy and healthy weekday lunch or dinner to whip up ahead of time. A make-ahead breakfast bake

While we’re talking meal prep, I switched up my usual oatmeal or smoothie routine for breakfast with this delicious Banana Berry Breakfast Bake by Spoonful of Flavor that has eggs, oatmeal, fruit and almond milk (I swapped coconut for almond). That means protein, carbs and fruit all together in one easy dish that you can make ahead on the weekend and cut into squares to reheat for breakfast all week long!
